This gluten-free berry tiramisu in a glass is the perfect combination of airy sponge cake, creamy mascarpone, and fresh summer berries. Thanks to KOMEKO KUCHENGLÜCK the dough becomes wonderfully light and airy. A dreamy dessert for hot days that makes an impression and is easy to prepare.

Ingredients

    For the dough:

  • 2 eggs (size M)
  • 60 g sugar
  • 0.5 Packet of vanilla sugar
  • 1 Pinch of salt
  • 60 g KOMEKO KUCHENGLÜCK
  • For the cream:

  • 250 g Mascarpone
  • 200 g whipping cream
  • 3 tbsp lemon juice
  • 75 g icing sugar
  • Miscellaneous:

  • Currants, blueberries
  • Orange juice for soaking the sponge muffins Orange juice for soaking the sponge muffins

Preparation

  1. Prepare the cream:
    Mix mascarpone with lemon juice and powdered sugar. Whip the cream until stiff and carefully fold it in. Chill.
  2. Bake:
    Preheat oven to 180 °C (top/bottom heat) and grease muffin tins.
  3. Prepare the dough:
    Separate the eggs. Beat the egg whites with salt until stiff, slowly adding the sugar until dissolved. Stir in the egg yolks. Gently fold in KOMEKO KUCHENGLÜCK.
  4. Baking & Cooling:
    Fill muffin tins with batter and bake for about 15 minutes until golden brown. Let cool and then cut in half.
  5. Layers:
    Place half a muffin in a glass, soak it with orange juice, and distribute berries on top.
  6. Layering cream:
    Add some cream, place the second muffin half on top, drizzle with juice again, add berries and cream.
  7. Cool:
    Repeat the process with the remaining glasses. Refrigerate until ready to serve.
