Moist muffins with banana and oats – baked gluten-free with KOMEKO KUCHENGLÜCK.

Ingredients

    For the dough:

  • 190 g KOMEKO KUCHENGLÜCK
  • 90 g oat flakes (gluten-free)
  • 100 g sugar
  • 3 tsp baking powder
  • 0.5 tsp salt
  • 1 Egg
  • 180 ml plant milk
  • 80 ml rapeseed oil
  • 1 tsp vanilla sugar
  • 240 g mashed bananas (approx. 2 ripe bananas)

Preparation

  1. Prepare the oven
    Preheat the oven to 200°C (top/bottom heat). Line a muffin tin with 12 paper baking cups.
  2. Mix dry ingredients
    In a medium bowl, combine KOMEKO KUCHENGLÜCK, oats, sugar, baking powder, and salt; set aside.
  3. Mix liquid ingredients
    In a large bowl, lightly whisk the egg. Stir in the milk, oil, and vanilla sugar (or vanilla extract).
  4. Add bananas
    Add the mashed bananas and mix well.
  5. Finish the dough
    Add the flour mixture and stir gently until just combined.
  6. Baking muffins
    Pour the batter into the prepared muffin cups, filling each cup about ¾ full. Bake in the preheated oven for 18 to 20 minutes, or until the tops spring back slightly when gently pressed.
