Gluten-free orange tart with a moist almond base and a velvety cream made with fresh orange juice. Served perfectly chilled, it's a wonderfully light treat with coffee or as a fruity dessert.

For the dough:

Preparation
The dough:
Combine KOMEKO KNUSPERLUST flour, ground almonds, and sugar in a bowl, mix, then add the oil, soy milk, and orange zest. Knead until a crumbly dough forms. Transfer the dough to a floured surface and form into a ball with your hands. Press the dough directly into a greased and floured tart pan (35 x 11 cm) with your hands and roll up the edges to ¾ of the pan's height. Preheat the oven to 180°C (fan).
The filling:
Juice the 3 oranges. Combine the juice, cornstarch, eggs, and sugar in a bowl and mix with a mixer until smooth. Add the marmalade and orange essence, mix well, and pour the mixture onto the tart base. Bake the tart for 30 minutes in the preheated oven.
Let it cool completely, then cut into pieces and enjoy!
