These Nuremberg gingerbread cookies are heavenly moist, wonderfully spicy, and completely gluten-free! With ground nuts, candied lemon peel, sultanas, and fine gingerbread spice, you'll conjure up the perfect pastry for the Advent season. Thanks to KOMEKO KUCHENGLÜCK the dough becomes particularly light and aromatic – a real classic reinterpreted!

Ingredients

    For the dough:

  • 100 g butter
  • 170 g sugar
  • 4 eggs (size M)
  • 300 g KOMEKO KUCHENGLÜCK
  • 1 Pack of baking powder
  • 1 Pack of gingerbread spice
  • 2 tbsp cocoa
  • 150 g grated nuts
  • 100 g candied lemon peel, chopped
  • 100 g sultanas
  • 50 g coconut flakes
  • 250 ml milk
  • For decoration

  • Glazes as desired

Preparation

  1. Prepare the butter mixture:
    Cream the butter and sugar until creamy, then gradually stir in the eggs.
  2. Mix dry ingredients:
    Mix KOMEKO KUCHENGLÜCK, baking powder, gingerbread spice, cocoa, nuts, candied lemon peel, sultanas and coconut flakes in a bowl.
  3. Make the dough:
    Add the dry ingredients to the butter mixture, add milk and mix everything into a smooth dough.
  4. Bake:
    Place the dough in portions (approx. 5 cm in diameter) on baking paper or gluten-free wafers. Bake in a preheated oven at 180°C (top/bottom heat) for about 15 minutes.
  5. Decorate:
    Once cooled, decorate with chocolate coating, icing, or whatever you like. Then serve and enjoy. Enjoy!
