These gluten-free and vegan brookies combine the best of both worlds: moist, chocolatey brownies and crispy cookies. Thanks to KOMEKO KUCHENGLÜCK, the dough is wonderfully soft and flavorful, while applesauce and almond butter provide natural sweetness. Perfect as a sweet snack on cold days or as a small gift during the winter season.

Ingredients

    For the brownie batter:

  • 40 g KOMEKO KUCHENGLÜCK
  • 120 g applesauce
  • 20 g baking cocoa
  • 30 g almond butter
  • 30 g chocolate drops (dark chocolate, vegan)
  • 30 g walnuts
  • 30 g agave syrup
  • For the cookie dough:

  • 100 g KOMEKO KUCHENGLÜCK
  • 60 g applesauce
  • 60 g almond butter
  • 2 tbsp vanilla extract
  • 30 g chocolate drops (dark chocolate, vegan)
  • 30 g agave syrup
  • Chopped hazelnuts (optional) Chopped hazelnuts (optional)

Preparation

  1. Preheating:
    Preheat oven to 180°C fan-forced.
  2. Brownie batter:
    Mix all the ingredients for the brownie batter in a bowl until you have a creamy, homogeneous mixture.
  3. Prepare:
    Distribute the mixture into small molds (e.g. muffin or canelé molds).
  4. Cookie dough:
    Mix all the ingredients for the cookie dough until a firm, slightly sticky dough forms. Drop small pieces onto the brownie batter.
  5. Topping:
    Sprinkle with chopped hazelnuts, if desired.
  6. Bake:
    Bake in a preheated oven for 20–22 minutes.
  7. Serve:
    Enjoy it hot or cold – or simply try both!
