These gluten-free and vegan flatbreads are the perfect accompaniment to soups, curries, or barbecues. Thanks to KOMEKO BROTGENUSS, they are exceptionally soft and ideal for filling or dipping. Whether enjoyed simply with olive oil and salt, with creamy hummus, or fresh avocado cream – they're always a hit!

Ingredients

    For the dough:

  • 1 tsp dry yeast
  • 0.5 tsp sugar
  • 160 ml water
  • 150 g KOMEKO BROTGENUSS
  • 50 g buckwheat flour
  • 1 tsp salt
  • 1 tbsp olive oil
  • For serving (optional):

Preparation

  1. Prepare the yeast mixture:
    Dissolve the sugar and dry yeast in lukewarm water and let it stand for about 10 minutes.
  2. Make the dough:
    Mix KOMEKO BROTGENUSS, buckwheat flour and salt in a bowl. Add yeast water and olive oil and knead everything into a smooth dough.
  3. Leave to rest:
    Continue kneading the dough on a lightly floured work surface, form it into a ball, wrap it in cling film and let it rise in a bowl in a warm place for 1 hour.
  4. Forms:
    Divide the dough into 4 equal pieces and roll each piece out thinly on a floured surface.
  5. Bake:
    Bake the dough rounds in a hot pan without fat for 3-5 minutes per side until golden brown.

Our tip: For a light grilled texture, briefly place the finished flatbreads in a contact grill.
