Bagels with Miso Butter

These gluten-free bagels with KOMEKO BROTGENUSS are golden brown on the outside, soft on the inside – and taste particularly aromatic with miso butter.

Ingredients

    For the dough:

  • 600 g §KOMEKO BREAD ENJOYMENT
  • 300 ml soy milk
  • 200 ml lukewarm water
  • 10 g dry yeast
  • 1 tsp powdered sugar
  • 1 tsp salt
  • 3 eggs
  • 40 g margarine
  • some sesame seeds
  • For the miso butter:

  • 60 g miso paste (gluten-free)
  • 125 g butter or margarine
  • 3 tbsp rice or maple syrup
  • 0.5 organic lemon (juice and zest)

Preparation

Prepare the miso butter

  1. Mix ingredients and refrigerate
    Mix all ingredients in a food processor, place in a bowl and store in the refrigerator.

Prepare the bagels

  1. Prepare the liquid mixture
    Heat the milk and water, melt the butter while stirring, and add the sugar.
  2. Mix dry ingredients
    In a bowl, mix the KOMEKO BROTGENUSS, salt and dry yeast.
  3. Make dough
    Add the liquid mixture and two lightly beaten eggs. Knead everything into a smooth dough.
  4. Shape and let rest
    Form the dough into 8 balls for buns or donuts (flour your hands well). Place on a baking sheet lined with parchment paper.
    Place a damp cloth over it and let it rise in a warm place (e.g. in a preheated oven at 40 °C) for 1 hour.
  5. Spread and bake
    Brush the bagels with the lightly beaten egg. Sprinkle with sesame seeds. Bake in the oven at 180°C (convection oven) for about 20 minutes.
  6. Enjoy
    Let the bagels cool and enjoy with the miso butter – enjoy!
