Yogurt bread without yeast

A simple, hearty bread that doesn't require any yeast and impresses with its moist, light consistency.

Ingredients

    For the dough:

  • 100 g buckwheat flour
  • 200 g KOMEKO KNUSPERLUST
  • 1 Packet of baking powder
  • 1 tsp salt
  • 1 tsp beet syrup or sugar
  • 1 Egg
  • 1 tbsp oil
  • 300 g plain yogurt
  • For the shape:

  • Fat & some buckwheat flour for the mold

Preparation

  1. Prepare the mold
    Grease a loaf pan (approx. 24 cm) well and dust with buckwheat flour.
  2. Mix the dough
    Combine buckwheat flour, KOMEKO KNUSPERLUST, baking powder, and salt in a bowl. Add the beet syrup, egg, oil, and yogurt. Blend everything with a mixer or food processor until a "tough" dough forms.
  3. Preheat oven
    Preheat oven to 180 °C top/bottom heat (fan oven: 160 °C).
  4. Bake dough
    Pour the batter into the prepared loaf pan and smooth it out. Bake in the preheated oven for about 45 minutes.
  5. Let the bread cool
    Remove the bread from the oven, turn it out onto a wire rack and let it cool.

Our tip:The bread stays fresh for about 3-4 days, is suitable for toasting and can also be easily frozen.
