Festive wine bread

This wine bread impresses with its moist crumb and subtle red wine flavor. Perfect with cheese, cold cuts, or simply on its own with butter. A bread that makes every table special.

Ingredients

    For the pre-dough:

  • 75 g buckwheat flour
  • 7 g sugar
  • 5 g dry yeast
  • 75 g water
  • For the dough:

  • 300 g KOMEKO BROTGENUSS
  • 12 g sugar
  • 7 g salt
  • 120 g red wine
  • 100 g water

Preparation

  1. Make the pre-dough
    Mix buckwheat flour, sugar, dry yeast, and cold water. Let stand at room temperature for 30 minutes.
  2. Prepare the main dough
    Knead the pre-dough with the remaining ingredients until smooth. Cover and let rest for 30 minutes.
  3. Shape & let go
    Halve the dough, shape into long loaves, and place in two loaf pans (20 x 11 x 7 cm). Cover and let rise for about 1 hour.
  4. Prepare the oven
    Preheat oven to 250°C (top/bottom heat: 230°C) using conventional oven heating (fan oven: 230°C). Place a metal bowl with stones or metal parts on the oven floor and heat it up.
  5. Baking with steam
    Place the loaf pans in the oven, pour water into the metal bowl, and quickly close the oven door.
  6. Adjust baking time
    After 10 minutes, reduce the temperature to 190 °C top/bottom heat (fan oven: 170 °C) and bake for another 40 minutes.

Our tip:To fully appreciate the bread's delicate wine flavor, try it after it's cooled. It pairs particularly well with cheese and makes a wonderful addition to a festive table.
