Preparation
- Make the pre-dough
Mix buckwheat flour, sugar, dry yeast, and cold water. Let stand at room temperature for 30 minutes. - Prepare the main dough
Knead the pre-dough with the remaining ingredients until smooth. Cover and let rest for 30 minutes. - Shape & let go
Halve the dough, shape into long loaves, and place in two loaf pans (20 x 11 x 7 cm). Cover and let rise for about 1 hour. - Prepare the oven
Preheat oven to 250°C (top/bottom heat: 230°C) using conventional oven heating (fan oven: 230°C). Place a metal bowl with stones or metal parts on the oven floor and heat it up. - Baking with steam
Place the loaf pans in the oven, pour water into the metal bowl, and quickly close the oven door. - Adjust baking time
After 10 minutes, reduce the temperature to 190 °C top/bottom heat (fan oven: 170 °C) and bake for another 40 minutes.
