These muffins combine delicate pumpkin puree with smooth chocolate—flavorful, vegan, and surprisingly easy to make. Ideal for those who like things sweet and uncomplicated.

Ingredients

  • 120 g KOMEKO KUCHENGLÜCK
  • 100 g cornstarch
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 0.5 tsp salt
  • 2 tsp cinnamon
  • 150 g coconut blossom sugar
  • 300 g pumpkin puree
  • 80 g vegetable butter
  • 60 ml soy milk
  • 60 ml orange juice
  • 100 g chocolate chips

Preparation

  1. Preheat oven
    Preheat oven to 180°C top/bottom heat.
  2. Mix dry ingredients
    In a bowl, mix all dry ingredients (except the chocolate chips).
  3. Prepare liquid ingredients
    In another bowl, mix the wet ingredients.
  4. Make dough
    Combine both mixtures and fold in the chocolate chips.
  5. Form muffins
    Fill the batter into muffin cups and sprinkle with additional chocolate chips if desired.
  6. Bake
    Bake muffins in the preheated oven for about 20–25 minutes (depending on size).
  7. Let cool
    Allow to cool before eating or enjoy while still lukewarm.
