These rolled dumplings are a true classic of southern German cuisine – made with delicate dough from KOMEKO KNUSPERLUST and an aromatic minced meat filling. They taste delicious and are very filling – perfect for cozy evenings or as a hearty Sunday meal!

Ingredients

    For the dough:

  • 200 g KOMEKO KNUSPERLUST
  • 2 eggs (size M)
  • 1 Pinch of salt
  • a little nutmeg
  • 30 g water (depending on the size of the eggs)
  • 1 tsp oil
  • For the filling:

  • 1 pc. onion
  • 1 Bunch of parsley (fresh)
  • 1 Egg (size M)
  • 50 g diced ham
  • 250 g minced meat (mixed)
  • a little salt and pepper
  • 0.5 l meat broth
  • Other:

  • 1.5 pcs. onions
  • 20 g butter

Preparation

  1. Prepare the dough:
    Knead together KOMEKO KNUSPERLUST, eggs, salt, nutmeg, oil, and water to form a firm dough. Cover the dough and let it rest for about 30 minutes.
  2. Prepare the filling:
    Separate the egg, reserving some of the egg white. Finely dice the onion, chop the parsley, and combine with the diced ham, the reserved egg, and the ground meat. Season with salt and pepper.
  3. Forming the dumplings:
    Roll out the dough to approximately 30 x 35 cm. Spread the filling evenly over it, leaving a 2 cm border on one side. Brush the border with the remaining egg white, roll up the dough tightly, and seal the roll.
  4. Cook:
    Cut the roll into pieces approximately 2 cm thick. Add to boiling meat broth, bring back to a boil briefly, and then simmer for 10 minutes over low heat.
  5. Serving:
    Slice the onions into rings, fry them in butter until golden brown, and pour them over the Maultaschen. Serve with a little broth.
  6. Serve & Enjoy: Bon appetit!

Our tip:They also taste very good when fried.
