Soft mochi dough filled with ice cream, gluten-free and easy to prepare.

Ingredients

    For the dough:

  • 115 g KOMEKO MOCHIGLÜCK
  • 35 g sugar
  • 150 g water
  • some potato starch some potato starch
  • some food coloring, cocoa, fruit powder or matcha (as desired) some food coloring, cocoa, fruit powder or matcha (as desired)
  • For the filling:

  • 5 scoops of sorbet (any flavor)

Preparation

  1. Mix ingredients
    Thoroughly mix KOMEKO MOCHIGLÜCK and sugar in a heatproof bowl. Add the water and stir until a smooth, lump-free mixture forms.
  2. Prepare the dough
    There are 2 possible methods to choose from depending on your kitchen equipment, microwave cooking OR steaming:
    - Microwave:Cover the bowl with foil or a heat-resistant lid and microwave for 5 minutes at 500 W. Remove the bowl from the microwave and mix/knead the finished mochi dough thoroughly until it is elastic and smooth. The dough should be slightly sticky but still easy to work with.
    - Steamer(or steamer or bamboo steamer): Pour the mixture into a steamer lined with parchment paper, cover, and place the steamer over boiling water for 20 minutes. Remove the finished dough from the steamer, place it in a bowl, and mix/knead well until elastic and smooth. The dough should be slightly sticky but easy to work with.
  3. Spread the dough
    Dust a dish (e.g., a baking sheet) with potato starch and spread the dough into it. This prevents it from sticking. Dust the dough with a little potato starch and spread it out/flatten it with your hands. Let it cool.
  4. Portion the dough
    Cut the cooled dough into 10 equal pieces and dust the pieces with potato starch.
  5. Prepare ice
    Divide the ice cream scoops into 10 equal pieces (e.g. 2 pieces each from 5 scoops of sorbet).
  6. Forming mochi
    Place one ice cream piece on each dough disc. Press the edges together in the middle to form a ball.
  7. Cooling mochi
    Freeze the formed mochi immediately.
    Let the mochi chill in the freezer for at least 30 minutes. Store in the freezer.
    Allow to thaw for about 10 minutes before eating
