These madeleines are airy, light, and perfect for coffee time. The lemon zest adds a fresh touch, while the chilling time in the refrigerator enhances the characteristic curve of these little French cakes. A classic that never fails to impress!

Ingredients

    For the dough:

  • 100 g KOMEKO KUCHENGLÜCK
  • 85 g butter
  • 2 eggs (size L)
  • 65 g sugar
  • 15 g honey
  • 1 pinch of salt
  • 4 g baking powder
  • 2.5 Lemon zest

Preparation

  1. Prepare the dough:
    Melt the butter in a small saucepan and let it cool. Beat the eggs, sugar, honey, and salt with a mixer until fluffy.
  2. Mix dry ingredients:
    Mix KOMEKO KUCHENGLÜCK with baking powder and stir in. Add butter and lemon zest and stir.
  3. Fill the baking pan:
    Pour the batter into the well-greased madeleine baking pan, do not overfill.
  4. Let it rest:
    Chill the baking pan in the refrigerator for at least 2 hours (ideally overnight).
  5. Bake:
    Bake in a preheated oven at 220°C (fan oven) for about 5 minutes, then reduce the temperature to 160°C and bake for another 2-3 minutes until nicely browned.
