Moist lemon cake with KOMEKO KUCHENGLÜCK flour – easy to prepare and refined with fresh lemon glaze. Perfect for those who want to enjoy gluten-free.

Note: This recipe is sufficient for a 30cm baking pan.

Ingredients

    For the dough:

  • 200 g butter
  • 200 g sugar
  • 1 pinch of salt
  • 1 Pack of vanilla sugar
  • Zest of two lemons
  • Juice of half a lemon
  • 4 Eggs
  • 200 g KOMEKO KUCHENGLÜCK
  • 2 tsp baking powder
  • For the glaze:

  • 100 g powdered sugar
  • 2 tbsp lemon juice

Preparation

  1. Preheat oven and prepare dish
    Preheat the oven to 180°C top/bottom heat and grease a loaf pan (30 cm) and dust with flour.
  2. Beat butter and eggs until creamy
    Mix the butter with sugar, vanilla sugar, salt, lemon zest and juice using a mixer, adding the eggs one at a time and beating until fluffy.
  3. Stir in flour and baking powder
    Mix KOMEKO KUCHENGLÜCK with baking powder and stir into the butter and egg mixture.
  4. Bake dough
    Pour the batter into the prepared loaf pan and bake at 180°C (top/bottom heat) for approximately 50–60 minutes (test with a skewer). Then let it cool completely.
  5. Prepare and apply glaze
    Mix powdered sugar with lemon juice and spread evenly over the cake.
