Soft mochi dough wraps fresh strawberries in sweet bean paste – easy to prepare and perfect to enjoy.

Ingredients

    For the dough:

  • 115 g KOMEKO MOCHIGLÜCK
  • 150 g water
  • 35 g sugar
  • some potato starch some potato starch
  • For the filling:

  • 10 fresh strawberries
  • 120 g Anko (sweet red bean paste)
  • some potato starch, for the work surface some potato starch, for the work surface

Preparation

  1. Mix ingredients
    Thoroughly mix KOMEKO MOCHIGLÜCK and sugar in a heatproof bowl. Add the water and stir until a smooth, lump-free mixture forms.
  2. Prepare the dough
    There are 2 possible methods to choose from depending on your kitchen equipment, microwave cooking OR steaming:
    - Microwave:Cover the bowl with foil or a heat-resistant lid and microwave for 5 minutes at 500 W. Remove the bowl from the microwave and mix/knead the finished mochi dough thoroughly until it is elastic and smooth. The dough should be slightly sticky but still easy to work with.
    - Steamer(or steamer or bamboo steamer): Pour the mixture into a steamer lined with parchment paper, cover, and place the steamer over boiling water for 20 minutes. Remove the finished dough from the steamer, place it in a bowl, and mix/knead well until elastic and smooth. The dough should be slightly sticky but easy to work with.
  3. Spread the dough
    Dust a dish (e.g., a baking sheet) with potato starch and spread the dough into it. This prevents it from sticking. Dust the dough with a little potato starch and spread it out/flatten it with your hands.
  4. Prepare the filling
    While the dough is cooling, wash the strawberries, remove the stems, and halve them if they're too large. Form 10 small balls from the anko, flatten them slightly, and wrap them around the strawberries.
  5. Portion the dough
    Dust your work surface and hands with potato starch. Divide the cooled dough into 10 equal pieces and shape into flat circles (approx. 8 cm in diameter).
  6. Forming mochi
    Place an anko-wrapped strawberry on each dough circle and carefully close the dough around the strawberry. Press the ends together at the bottom to form a round mochi ball.
  7. Serve
    Place the finished mochi on a starch-dusted plate and let it rest briefly before serving. Enjoy fresh!
