This Kaiserschmarrn is a true classic that always turns out great! The dough is wonderfully fluffy and light, while the raisins and the delicate scent of vanilla and butter create that signature, irresistible flavor. Whether served with applesauce or plum compote, this dessert tastes like home and pure comfort.

Ingredients

    For the dough:

  • 200 g KOMEKO KUCHENGLÜCK
  • 30 g sugar
  • Pinch of salt
  • 4 Eggs (size M)
  • 300 ml milk
  • Butter for baking
  • Other:

  • 30 g raisins
  • Rum or Calvados
  • Icing sugar for sprinkling
  • Plum compote or applesauce

Preparation

  1. Prepare raisins:
    Soak raisins in a little rum or Calvados and let them soak overnight (alternatively, use without alcohol).
  2. Mix the dough:
    Separate the eggs. Mix KOMEKO KUCHENGLÜCK, sugar, salt, egg yolk and milk into a smooth, thick batter.
  3. Fold in beaten egg whites:
    Beat the egg whites with a pinch of salt until stiff and carefully fold into the batter.
  4. Bake:
    Heat some butter in a shallow pan, pour in batter about a finger thick, sprinkle with raisins and cover with a lid.
  5. Turning & cutting:
    Once the dough is firm, turn it over and bake uncovered. Then tear it into pieces with two forks and let it steam briefly.
  6. Serve:
    Sprinkle with powdered sugar while warm and serve with plum compote or applesauce. Enjoy!
