These almond cookies are a dream for all nut lovers! Golden brown and crispy on the outside, tender and buttery on the inside – perfectly balanced with the delicate aroma of bitter almonds and lemon zest. The roasted almonds give the bread an intense flavor, while the chocolate coating adds a sweet finishing touch. Ideal as a pastry with coffee or as a small gift from the kitchen.

Ingredients

    For the dough

  • 80 g sliced almonds
  • 20 g chopped almonds
  • 200 g butter
  • 100 g powdered sugar
  • Bitter almond aroma
  • Lemon peel
  • 1 pinch of salt
  • 1 egg (size M) 1 egg (size M)
  • 300 g KOMEKO KUCHENGLÜCK
  • 4 g baking powder
  • Miscellaneous:

  • Chocolate coating for decoration

Preparation

  1. Roast almonds:
    Place the sliced and chopped almonds on a baking tray and lightly toast them in the oven or in a pan, then let them cool.
  2. Mix the dough:
    Mix butter, powdered sugar, salt, bitter almond flavoring and lemon zest, then fold in the egg.
  3. Mix dry ingredients:
    Mix the flour KOMEKO KUCHENGLÜCK and baking powder, then add the butter mixture and almonds and knead into a smooth dough. Wrap the dough in foil and chill for 1 hour.
  4. Shaping and baking:
    Briefly knead the dough, roll it out to a thickness of 2 cm, and cut it into rectangles or squares. Place on a baking sheet and bake at 190°C (top/bottom heat) for 12–15 minutes.
  5. Decorate:
    After cooling, decorate with melted chocolate coating
